Imitation "Sauce" Chicken Pinenut and tomato Salad


Tried to find this recipe where I got it a couple years ago but couldnt find it but love, love, love this salad.

(Imitation Sauce) Chicken Pine Nut Tomato Salad
1 pound barbequed chicken
8 ounces baby tomatoes
2 ounces toasted pine nuts
4 ounces crumbled gorgonzola
1 pound mixed greens
4 ounces gorgonzola dressing (recipe below)

Place greens, tomatoes, and chicken into a large mixing bowl. Add dressing and toss ingredients together until it has been lightly coated. Place equal quantities into serving plates and top with pine nuts and crumbled cheese. Enjoy!

Gorgonzola Dressing

1 cup crumbled gorgonzola
1/2 cup lemon juice
1/2 cup honey
1 cup red wine vinegar
3 cups olive oil
1 teaspoon kosher salt
1 pinch fresh ground pepper

Place first four ingredients in blender and begin to blend on low speed until all ingredients are incorporated. Slowly pour in oil to emulsify liquids together. Season with salt and pepper to taste.

Chicken Tamale Casserole

Chicken, cream corn, jiffy mix and enchilada sauce is almost all you need to make this recipe. Its really price effective and easy to make. I crockpot and then shred chicken once a week and keep in my freezer for meals like this and it works great.

Quinoa Salad with Chicken and Black Beans

So i saw this recipe on this show i sometimes turn to when the news is on commercial and i usually think her recipes are a little on the unhealthy side, lots of creams etc... but this one was healthy and i tried it and it was delicious. Also it had three types of protein: quinoa, chicken, and black beans. I also put some zucchini i had in the fridge in it. Here is the recipe.

Spaghetti squash and Meatballs

So i saw this on the chew and cant say i actually made this recipe down to the spaghetti sauce. But I used the directions for cooking the spaghetti squash and the turkey meatballs. The sauce seemed like a lot of work when i can buy it at the store for $1. What i thought was cool as well is the meatballs cook in the sauce so you dont dirty a pan and bake them or anything. My husband has been a little bit on a Paleo kick and he loved that this didnt have traditional noodles but he is still having his usual deserts at night so hes not totally committed. Healthy Chicken Nuggets

There is a really cute food blog called Weelicious that I have just found (thanks to pinterest!) that had some tasty nuggets so I thought I would share as I did try them and they were Delicious. They are baked and also made with oatmeal among other things so very healthy as well. The only thing that I noticed that you should do is broil them on both sides to make them crispy which she says you can do but I think is kind of a must or they are a little soggy.

Saint Patty's Day

So its been my tradition to make a cabbage soup for dinner on Saint Patty's day. I'm not a big one for trying the corned beef and I wanted something healthy to do that is similar. This is a slow cooker or crock pot recipe. I got the recipe from here but have made a few changes so here it is.

  • 1Lb ground turkey browned
  • 3 cups chopped cabbage
  • 1 large onion, chopped
  • 4 red potatoes quartered
  • 1 can (14.5 ounces) diced tomatoes, with juice
  • 1 1/2 (12 ounces) cups Salsa
  • 1(10-3/4 oz) can condensed tomato soup
  • 1 can (approx. 15 ounces) kidney beans, rinsed and drained
  • 2 teaspoons chili powder
  • salt and pepper, to taste
As Crockpot recipes don't need a lot of direction just pour everything in and cook 6-8 hours on Low!
